Sunny Salad with Fried Feta Cheese

Whether at a barbecue with friends or just as a little snack in between meals – salad is the perfect dish for summer. Prepared with different ingredients, served warm or cold, salad suits the taste of everybody. We present a fresh and crispy recipe for a perfect summer salad, with many colourful ingredients, which put you in a good mood also on rainy days.

Ingredients for four persons:

  • 1 cucumber
  • 1 iceberg lettuce
  • 2 bell peppers (red)
  • 2 onions
  • 4 tomatoes
  • 1 bunch parsley
  • 5.28 oz. chili
  • 5.28 oz. olives (black)
  • 8 table spoons olive oil
  • 1 lemon
  • 5.28 oz. yoghurt
  • salt
  • pepper
  • 7.04 oz. feta cheese
  • 1 egg
  • 4 table spoons flour
  • 8 table spoons breadcrumbs


1. Clean vegetables thoroughly. Quarter cucumber lengthwise, and then cut into slices. Cut lettuce in slices. Remove seeds from bell pepper and cut into rings; the same with the onions. Cut tomatoes in cubes. Chop parsley. Put these ingredients with the chili and olives in a bowl.

2. Dressing: Spice four table spoons of olive oil with lemon juice, salt and pepper. Optionally, you can reduce the olive oil about two table spoons, and mix it with yoghurt instead. Mix prepared ingredients, olives and chili in a big bowl.

3. Add parsley and feta cheese to the salad. If you like it crispy, you can shortly fry the feta cheese. For the purpose, you cut the cheese and soak it in a marinade made of egg, flour and breadcrumbs. Then, fry it in a pan with oil for about 5 minutes on each side.
