Winter Salad – Light and Luscious

In the cold winter, we often tend to eat too much and too fatty. After an exhausting day at work, we come home and heat up a microwave meal or quickly fry a steak in the pan. But especially in winter, when sport and exercise are often neglected, calorie-conscious eaters should watch the content of their food. So how about a light winter salad? With luscious and nutritious winter vegetables and fruits, you not only fight winter pounds, it also tastes good!

Ingredients (for 2 persons):

7.04 oz. lamb’s lettuce

200 oz. chicory

½ cucumbers

2 tomatoes

1 mozzarella (light)

1.76 oz. red grapes (without seeds)

2 small apples

1 onion

3-4 table spoons fruit or white wine vinegar

2 table spoons mustard



2 table spoons oil

4 table spoons freeze-dried herbs


Thoroughly clean and wash lamb’s lettuce and chicory. Cut chicory in stripes. Wash cucumber and tomatoes und cut them into half slices. Cube mozzarella. Then clean and wash the grapes. Wash apples, quarter them, remove the seeds and cube the pieces. Peel onion and also cube it. Mix vinegar, mustard, salt and pepper. Add oil, onion, freeze-dried herbs and apple cubes. Mix salad lettuce, mozzarella and grapes, and put them on two big plates. Finally, pour vinaigrette over the salad.
